This last weekend Brock's team held their annual Alumni Match. The alumni put up a good fight, but you could tell that it had been a while for most of them. The Warriors won in 3 games and then there was a huge banquet for everyone. Loads of fun, as always. They play UCLA this weekend, we'll see what Brock's freakin crazy coach comes up with for this match... (Brock tells me not to rip on his coach online, but I just can't help it)
And yes, I know my camera sucks, I think it has a like a 7 second delay. This does however keep me entertained during the match. I have to pay attention and try to anticipate whether the ball is going to go to Brock about 7 seconds early so that I can try and get a good picture. Sometimes it works, most of the time it doesn't... But I got a good one of him serving.
I am officially done with my job at the salon! I have a few days off before Brock and I head up to the North Shore for our 2 year anniversary. We rented out this cute little bungalow for the weekend. Here's a few pics off their website, but I'll post some actual pics when we see it :)
Talk about a serious upgrade from what we live in now. I mean, furniture?? Somewhere besides the bed to eat? It can't be...
Just for fun, I posted a picture of my kitchen now, just so you can understand how excited I am...
On an entirely different note, but kind of the same since I'm talking about kitchens, I made something awesome the other day for breakfast. My sister-in-law, Molly, is super creative and she's always posting recipes and pictures of yummy food that she makes on her blog. So I decided to copy her and put up a recipe that I tried out. Her presentation and overview is way better than mine, but hey it's my first shot :)
I found this recipe in a cookbook stolen from Brock's friend called Favorite Recipes the Costco Way. First off, this book is incredible, especially if you are an avid Costco shopper like me...even though I only cook for 2...on a rare occasion. All the ingredients for every recipe can be found at Costco. There are even some recipes by Food Network's Mario Batali, Sandra Lee and, of course, Paula Deen.Since today was my first real day of "unemployment" I decided to make a batch of French Toast Muffins and take some pictures. Like I said before, my presentation sucks, but if this stuff didn't taste so amazingly good, then I wouldn't even mention it!
TaDa!! Okay here is the recipe:
French Toast Muffins
5 Eggs
1 Tbsp. Vanilla Extract
1 tsp. Ground Cinnamon (I would suggest only 1/2 tsp. though)
1 tsp. Grated Nutmeg (again, 1/2 tsp.)
1 Tbsp. Butter
4 Kirkland Signature Apple Crumb Muffins, cut in 4 slices lengthwise
1 cup Whipping Cream, whipped to soft peaks
Maple Syrup
1. Place eggs and vanilla in a medium bowl and beat together. Add cinnamon and nutmeg and mix until well incorporated.
2. Melt butter in a skillet over low heat.
3. Dip the muffin slices into the egg mixture and fry until golden brown.
4. Serve with syrup and whipped cream.
All in all, it's really no different than making normal french toast, there's just no milk in the dipping mixture. So good though! Try it out and let me know if you like it. It was fun to put a twist on something we make all the time :)

Love the new page! But what exactly are we voting for?
Hooray that Brockie got to play. And hooray to you guys for getting to stay in that cute bungalow. It looks so bright and cheerful. Your french toast recipe looks delightful and delicious, but alas, our nearest Costco is in Canada. :( But keep the recipes coming. I always need fresh ideas...or else it's some sort of pizza every night (calzones, homemade pizza, Pizza Hut, etc.)
